Summer Blog Challenge Day #18
I LOVE anything with black beans! Then to add quinoa with it, makes it an ultimate favorite recipe!
I saw this recipe on face book, not sure by who, but I saw a version of it and thought I'm going to make that... This version had corn, quinoa and black beans. I didn't have any corn and I'm leaving corn out of my diet anyway, so I just used what was in my house and so here is the ingredients I used to make this:
Ingredients:
1 cup of quinoa
1 can of black beans
Chopped tomatoes
4 mini yellow and orange peppers
Shredded montery jack cheese
Salt and Pepper
Salt and Pepper
Directions:
Cook quinoa, black beans and mix together
Add chopped tomatoes, peppers and cheese
Then season with salt and pepper!
ENJOY!


Wow! That sounds delicious! I just picked up a can of black beans too! I love black beans and scrambled eggs in the morning with some salsa. I'm definitely going to give this a try. I'm dedicating one day a week as a meatless day, so this would be perfect for dinner! Tons of protein!
